Tasty Raw Carrot, Coriander, Cumin Salad

3 c fresh grated carrots
3 cloves garlic, minced
3 t coriander
2 t cumin
1/3 c olive oil
3 T lemon juice
3/4 t sea salt
1 c sliced almonds - optional

Stir all ingredients together and let sit in the fridge for an hour. Best fresh, but the leftovers are great for a week too!
